When cooking for the first time on you Barbacoa.PRO grill, as we’ve covered in earlier posts, your Kamado will need to be seasoned and a lower than normal cooking tempterature needs to be used to allow the new ceramic shell and lid to adjust to cooking.

With this in mind, we think some of the best things to cook on the grill for the first time are the old favourites, keep it simple and forgiving, like chicken thighs, burgers and sausages.

We’re fancying some chicken thighs, they’re relatively inexpensive, easy to find in the the supermarket, and they cook up juicy and flavourful on a Barbacoa.PRO grill.

Here is a recipe we like for smoked chicken thighs:

Ingredients:

  • 12 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat your Barbacoa.PRO grill to 350 degrees Fahrenheit.
  2. In a small bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture all over the chicken thighs.
  4. Place the chicken thighs on the grill grates and cook for 25-30 minutes, or until cooked through.
  5. Let the chicken thighs rest for 5 minutes before servi
